Shrimp and Zucchini in Garlic Tomato Sauce

Ingredients:
1 tablespoon olive oil
1 cup cherry tomatoes, halved
1 tablespoon tomato paste
10 oz shrimp, peeled and deveined
1/2 teaspoon chili powder
2 cloves garlic, minced
1 1/2 cups zucchini, chopped into cubes
1 tablespoon chopped green olives
1 tablespoon basil, thinly chopped
1 tablespoon parsley, thinly chopped
Directions:
Drizzle the olive oil into a pan. Bring to medium-high heat. Add the cherry tomatoes. Saute for 2-3 minutes. Lightly press down on the cherry tomatoes with a spatula to release their juices. Add the tomato paste and stir to mix.
Add the shrimp and chili powder to the pan. Cook and stir for 2-3 minutes. Then add the garlic and zucchini, cook and stir for 3 minutes.
Turn off the heat. Stir in the olives, basil, and parsley.
Transfer the shrimp and zucchini to serving plates. Enjoy!
