Tomato Mozzarella Balsamic Chicken

Ingredients:
2 tablespoons olive oil
1/3 cup balsamic vinegar
1 tablespoon Dijon mustard
1 teaspoon Italian seasoning
2 cloves garlic, minced
2 tablespoons honey
Kosher salt, to taste
Ground black pepper, to taste
2 tablespoons finely chopped basil
8 oz grape tomatoes, halved
8 oz mozzarella pearls
2 tablespoons avocado oil
4 boneless skinless chicken breasts
Directions:
Whisk together olive oil, balsamic vinegar, Dijon mustard, Italian seasoning, garlic and honey in a mixing bowl. Season with salt and pepper. Set aside.
In a separate bowl, toss together the basil, grape tomatoes and mozzarella pearls. Season with salt and pepper. Set aside.
Preheat oven to 400° F.
Pour avocado oil into a large skillet and bring to medium-high heat. Once hot, add the chicken breasts and season with salt and pepper. Cook for 2 minutes per side, until a light golden brown.
Remove the pan from the heat and add in the balsamic vinegar mixture. Stir together and then add the tomato and basil mozzarella mixture over the top of the chicken.
Place the skillet into the oven and bake uncovered for about 22 minutes, until chicken is fully cooked.
Remove from oven and let rest for 5 minutes before serving.
