Whisk together olive oil, honey, Dijon mustard and lime juice in a small bowl. Brush the salmon with the glaze. Place the salmon, skin-side down. Season the salmon and carrots with salt and pepper.
Place in the oven and broil for about 7 minutes, until the salmon is golden brown.
Remove from oven and transfer the salmon to serving plates. Season with additional salt and pepper and enjoy!

Honey Dijon Glazed Salmon
Serves 4
Ingredients:
2 tablespoons extra-virgin olive oil
2 tablespoons honey
1 tablespoon Dijon mustard
1 tablespoon fresh lime juice
4 salmon fillets
Kosher salt, to taste
Ground black pepper, to taste
