Hot Turkey and Cheese Sandwich

Ingredients:
2 tablespoon minced red onion
4 tablespoons sour cream
4 tablespoons Dijon mustard
1 teaspoon dried thyme
4 tablespoons butter
8 slices sourdough bread
8 slices deli turkey
4 slices tomato
4 slices cheddar cheese
Directions:
Combine minced onion, sour cream, mustard and thyme in a mixing bowl.
Butter one side of each slice of bread.
Evenly spread mustard mixture over the unbuttered side of 4 slices. Top with 2 slices of turkey, 1 tomato slice and 1 slice of cheddar cheese. Place remaining slices on top, with the butter side up.
Heat a large non-stick skillet over medium heat. Once hot, add one sandwich. Cook for about 3 minutes per side, until golden brown. Repeat with remaining sandwiches and enjoy!
