Light, Flavorful and oh so yummy.

Ingredients:

1/2 pint cherry tomatoes
2 cucumbers
4 carrots
1 Vidalia onion
2 bell peppers
1/2 bunch radishes
3/4 teaspoon salt
1/4 teaspoon pepper
4 teaspoons sugar
4 teaspoons vinegar
1 bag spinach

Directions:

  1. Clean and cut cherry tomatoes, cucumbers, carrots, Vidalia onion, bell pepper and radishes into small chunks and place in large bowl.
  2. Season with salt, pepper, sugar and vinegar and stir together. Place in the refrigerator for 2 hours.
  3. Place spinach in a salad bowl. Top with chilled vegetables. Toss together and enjoy.
Course: Salad
