Mashed Sweet Potatoes with Maple Syrup

Ingredients:
3 1/2 lb sweet potatoes, peeled and cut thick slices
4 tablespoons unsalted butter
1/3 cup pure maple syrup
Salt, to taste
Ground black pepper, to taste
Cold water
Directions:
Place sweet potatoes in a Dutch oven. Add cold water to cover and 1 teaspoon salt. Turn burner to high, cover Dutch oven and bring water to a boil. Uncover and cook potatoes for about 10 minutes more, until potatoes are very soft. Drain potatoes in a colander.
Return potatoes to Dutch oven. Add butter and maple syrup and salt and black pepper to taste; mash or beat potatoes until desired consistency is reached. Serve hot.
