Mashed Sweet Potatoes with Marshmallow Creme
Serves 6
Ingredients:
3 cups sweet potatoes, cooked and mashed
2 tablespoons butter
1/3 cup marshmallow crème
1/4 cup milk
1/2 teaspoons salt
1 egg, well beaten
1/2 cup miniature marshmallows
Directions:
Preheat oven to 400° F.
Mix together sweet potatoes, butter, marshmallow crème, milk, and salt. Beat in egg.
Spoon sweet potatoes into a lightly buttered baking dish. Place in oven and bake for 25 minutes. Remove sweet potatoes from oven.
Preheat broiler.
Top sweet potatoes with miniature marshmallows and then brown under broiler for about 4 minutes.
