Green Beans with Bacon

Bacon and shallots enhance the wonderful flavor of fresh green beans.

Ingredients:

2 1/2 lb. green beans, trimmed
3 bacon slices
1/2 cup shallots, chopped
1 teaspoon lemon juice, freshly squeezed
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

Directions:

  1. Bring a pot of water to a boil. Add green beans to pot and cook until beans are crisp-tender, about 5 minutes. Drain green beans, and then plunge green beans into ice water to stop cooking. Drain again; set aside.
  2. In a Dutch oven set over medium heat, cook bacon until crisp. Remove bacon from Dutch oven. Crumble bacon; set aside. Add shallots to drippings in Dutch oven; saute until tender, about 4 minutes. Add beans, juice, salt and black pepper to Dutch oven; stir to combine. Cook until thoroughly heated through, about 5 minutes, stirring often. Remove from heat. Place green beans into a serving bowl. Sprinkle bacon over green beans.
