Sweet Chili Coconut-Lime Chicken with Coconut-Lime Cauliflower Rice

Ingredients:
1 cup light coconut milk
1/2 cup sweet chili sauce
2 tablespoons lime juice
4 chicken breasts
1 1/2 tablespoons coconut oil
8 cups cauliflower rice
Salt, to taste
Ground black pepper, to taste
1/4 cup fresh cilantro, chopped
Directions:
Pour 1/2 cup of coconut milk, the sweet chili sauce and 1 tablespoon of lime juice in a resealable container. Stir to combine. Add the chicken breasts and toss to coat. Seal shut and place in the refrigerator to marinate for 1 hour.
Bring a large pan to medium heat. Place the chicken in to cook for 4-5 minutes per side.
In a separate pan, melt the coconut oil over medium heat. Then add cauliflower rice and season with salt and pepper. Saute for 5-7 minutes, until the cauliflower rice is tender. Pour in the remaining lime juice and coconut milk. Add the chopped cilantro and stir to combine.
Spoon the cauliflower rice onto serving plates. Lay the chicken breasts on the rice. Enjoy!
