Loaded Potato Skins with Bacon and Cheese

Ingredients:
4 russet potatoes
Olive oil, for drizzling
Salt, to taste
Ground black pepper, to taste
6 strips bacon, cooked and chopped
2 cups shredded cheddar cheese
Sour cream, to taste
Thinly sliced green onions, for garnish
Directions:
Preheat oven to 400° F.
Poke each of the potatoes several times with a fork. Rub a little olive oil over potatoes. Arrange the potatoes on a baking dish. Place in the oven to bake for 1 hour. Remove from oven and let cool slightly.
Increase the oven temperature to 425° F.
Cut the potatoes in half lengthwise. Scoop out the inside of the potatoes, leaving a small perimeter around the edges. Arrange the potato skins on the baking sheet.
Drizzle and brush olive oil over the potato skins. Season the interior of the potato skins with salt and pepper.
Return to oven and bake for 10 minutes. Flip potato skins to cut side down and bake for another 10 minutes, until crispy and golden brown.
Remove from the oven. Flip potato skins to cut side up. Sprinkle bacon and shredded cheese on the interior. Return to oven and bake for 2-4 minutes, until cheese is just melted.
Remove from the oven. Transfer potato skins on a tray or large dish. Add a dollop of sour cream to the tops of each potato skin and garnish with sliced green onions. Enjoy!
