Melt 1 tablespoon butter in a small saucepan set over medium heat. Add onion; cook and stir until tender.
Reduce heat to low then stir in parsley, rosemary and sage; remove from heat.
Melt remaining 1 tablespoon butter; brush over surface of chicken. Rub herb mixture over chicken and sprinkle salt and ground black pepper over chicken.
Arrange chicken on a baking pan, loosely cover chicken with aluminum foil and place in oven to roast for 75 minutes. Remove from oven and let chicken stand for 5 minutes before serving.

Herb Roasted Chicken
Serves 6
Ingredients:
3 lb bone-in chicken
2 tablespoons butter
1/3 cup finely chopped onion
3 tablespoons chopped fresh parsley
1 1/2 teaspoons finely chopped fresh rosemary
1 1/2 tablespoons chopped fresh sage leaves
Salt, to taste
Pepper, to taste
Directions:
