In a shallow dish, combine flour, paprika and salt; set aside.
In a small bowl, whisk together the half & half and egg.
In a large skillet, heat butter.
Dip each perch in egg mixture then flour mixture. Gently set perch in skillet, in hot butter, and saute until browned on both sides, about 3 minutes per side.
Remove perch from skillet and drain on a paper towel-lined plate.

1 1/2 lb ocean perch
1 1/2 cups flour
1 1/2 tablespoons paprika
1/2 teaspoon salt
1 cup half & half
1/2 cup clarified butter
1 egg
