Ham and Almond Stuffing
Serves 6
Ingredients:
1 onion, chopped
1/4 cup butter, melted
1/2 lb ham, cooked and diced
1 cup chicken stock
1/4 cup almond slivers
1 box premade stuffing
1/2 cup apple cider
1 tablespoon olive oil, for onions
Directions:
Pour olive oil into a skillet and bring to medium-low heat. Once hot, add onions. Cook until onions are caramelized, stirring frequently.
Preheat oven to 325° F.
Stir together apple cider, melted butter and chicken stock in a mixing bowl.
Add stuffing to a separate mixing bowl. Pour butter mixture over stuffing, cover and toss well.
Add ham, almond slivers and onions to the stuffing and toss together.
Pour stuffing mixture into a baking dish. Cover with aluminum foil and bake for 25 minutes.
Remove foil and bake for an additional 10 minutes.
