Cinnamon Coffee Crinkle Cookies

Ingredients:
1 1/2 cups flour
1/4 teaspoon salt
1 teaspoon baking powder
1 1/2 teaspoons ground cinnamon
2 tablespoons instant coffee
1 teaspoon vanilla extract
1/2 cup unsalted butter, melted
3/4 cup brown sugar
1 large egg
1/4 cup sugar, for rolling
1/4 cup powdered sugar, for rolling
Directions:
In a medium mixing bowl, stir together the flour, salt, baking powder, and ground cinnamon. Set aside.
Stir together the instant coffee and vanilla extract in a separate bowl. Set aside.
In a large mixing bowl, beat together the melted butter with the brown sugar until smooth. Then mix in the egg, followed by the coffee mixture . Stir until fully combined.
Gradually pour in the flour mixture, mix until just combined. The dough will be soft and slightly sticky.
Cover the dough and refrigerate for 30 minutes.
Preheat the oven to 350°F. Line a baking sheet with parchment paper.
Divide the dough into 12 segments and roll them into balls. Roll the dough balls in the sugar first, then in the powdered sugar.
Arrange them on the baking sheet and gently press down slightly to flatten. Place the baking sheet in the oven to bake for 10-12 minutes.
Remove from the oven and let the cookies rest on the baking sheet for 5 minutes. Then transfer to a wire rack to cool completely.
