Grilled Shrimp Bowl with Avocado and Corn Salsa
Serves 4
Ingredients:
1 lb shrimp, peeled and deveined
2 tablespoons lime juice
1 tablespoon olive oil
Salt, to taste
Ground black pepper, to taste
1 avocado, diced
12 cherry tomatoes, halved
1 red onion, finely chopped
1 cup frozen corn kernels, thawed
Directions:
Place the shrimp into a bowl. Pour in the lime juice, olive oil, salt, and pepper. Toss to coat. Let sit for 10 minutes to marinate.
In a separate bowl, combine the avocado, cherry tomatoes, red onion, and corn. Stir together.
In a third bowl, stir the Greek yogurt and garlic together.
Set the grill to medium-high heat. Once hot, add the marinated shrimp and grill for 2-3 minutes per side, until pink and opaque.
Transfer the shrimp to serving bowls. Spoon corn salsa over the shrimp, then drizzle the garlic yogurt sauce over top. Enjoy!
