Bring a skillet to medium heat, once hot, cook chorizo breaking apart while cooking. Once fully cooked, remove from heat and set aside.
Spread out the tortilla chips on baking sheet. Sprinkle chorizo over chips, pimento peppers, green onions and then the cheese. Place in the oven and bake for 15-20 minutes, until cheese is fully melted.
Remove nachos from the oven and sprinkle cilantro, pico de gallo and hot sauce over top.

Spicy Chorizo Nachos
Serves 4
Ingredients:
1 lb chorizo sausage
1/2 bag tortilla chips, 8 oz.
1 cup chopped olives
3 green onions, chopped
4 cups shredded Monterey Jack cheese
1/2 cup chopped cilantro
Pico de Gallo, for topping
Hot Sauce, for topping

Preheat oven to 350° F.
