Apple Cinnamon Walnut Oatmeal Cookies

Ingredients:
2 teaspoons ground cinnamon
3 cups old-fashioned oats
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup unsalted butter
1 cup dark brown sugar
1/2 cup sugar
1 egg
2 teaspoons pure vanilla extract
1/2 cup cinnamon applesauce
1 red apple, peeled, cored, and diced
1 cup chopped walnuts
Directions:
Preheat oven to 375° F. Line two cookie sheets with parchment paper.
Combine cinnamon, oats, flour, baking soda and salt in a mixing bowl. Set aside.
Using hand mixer, cream butter, both sugars together until light and fluffy. Add in egg and vanilla extract, mix until well incorporated. Add applesauce and mix for about a minute. Add oats and gradually mix until incorporated.
Stir in diced apple, chopped walnuts.
Scoop out dough and place on cookie sheets. Place in oven and bake for about 13 minutes, until golden.
