Catfish Tacos
Serves 4
Ingredients:
1 lb catfish fillets, cut into bite size pieces
1/2 cup seafood fry mix
4 flour tortillas, warmed
1/2 cup tartar sauce
1/2 cup salsa
1 tablespoon ground cumin
Vegetable oil, for frying
Lime wedges, for garnish
Directions:
In a small bowl, stir together tartar sauce and salsa. Cover with plastic wrap and refrigerate until ready to use.
In a shallow dish, stir together cumin and seafood fry mix.
Moisten catfish pieces with water; shake off excess. Coat catfish pieces in fry mixture.
Add oil to a large skillet. Bring skillet to medium heat.
Fry catfish pieces until golden brown and flip once. (Cook for 3 to 5 minutes) Drain cooked catfish on a paper towel-lined plate.
Evenly divide catfish among warmed tortillas. Serve with tartar-salsa and lime wedges.
