The Absolute Best Pork Spare Ribs

Ingredients:
1 rack pork spare ribs
For dry rub
1 teaspoon garlic powder
2 tablespoons brown sugar
1/2 teaspoon sea salt, (finely ground)
4 tablespoons dark roast coffee
1/2 teaspoon coriander powder
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 teaspoon onion powder
Cooking oil
For sauce
1 tablespoon ground cayenne pepper
3 tablespoons Dijon mustard
2 tablespoons fresh lime juice
1 tablespoon orange juice
3 tablespoons tomato paste
1 habanero pepper, finely diced
2 tablespoons maple syrup
1 cup dark rum
1 tablespoon chili paste
Directions:
Mix together all dry rub ingredients together very well, except cooking oil. Add cooking oil slowly. Add enough cooking oil to make a thick paste.
Pat dry ribs before applying dry rub. Coat spare ribs with dry rub evenly.
Preheat oven to 225 degrees F.
Place spare ribs on a wire rack in the oven. Roast for 4-5 hours.
As spare ribs are roasting, mix together all the sauce ingredients. Brush sauce over spare ribs and then place spare ribs back in the oven and broil for 4-6 minutes.
