Lay each tortilla flat. Spoon 1/3 of the filling on one side of each tortilla. Then fold the tortilla in half.
Pour a small amount of canola oil into a large pan. Bring to medium heat. Place the quesadilla in the pan and cook for 3-4 minutes per side, until lightly browned and the cheese is melted. Transfer to a plate.

Mediterranean Quesadillas
Serves 3 quesadillas
Ingredients:
1 cup shredded mozzarella cheese
1/2 cup crumbled feta cheese
1/3 cup diced red onion
1 cup chopped spinach
1 tomato, diced
Canola oil, for frying
3 burrito-size tortillas
