Green Goddess Hummus

Ingredients:
2 cans chickpeas, drained with liquid reserved, 15 oz. each |
1/3 cup chickpea liquid, more if needed |
6 tablespoons lemon juice |
1/4 cup olive oil |
1/2 cup tahini |
1 cup spinach |
1 clove garlic |
1 green onion, roughly chopped |
1/2 cup roughly chopped parsley |
1 teaspoon cumin |
1/2 teaspoon salt |
Directions:
- Add the chickpeas, chickpea liquid, lemon juice, olive oil, tahini, spinach, garlic, green onion, parsley, cumin, and salt to a blender.
- Blend on high for about 30 seconds, until creamy.
- Transfer the hummus to a serving plate. Enjoy!
