Mediterranean Chicken with Orzo

Ingredients:
1 1/2 cup whole wheat orzo
2 tablespoons olive oil
1 lb chicken breasts, sliced thin and tenderized
1/2 tablespoon minced garlic
1/4 cup white wine
1 package grape tomatoes, halved, 10 oz.
1 cup spinach, chopped
1/4 cup pine nuts
1/2 cup kalamata olives, pitted and sliced small
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh basil
1/2 teaspoon oregano
1/2 teaspoon ground black pepper
1/2 cup crumbled feta
Directions:
Bring a small pan of water to a boil. Cook orzo according to the package directions.
Pour 1 tablespoons olive oil into a skillet and bring to medium heat.
Add the chicken and cook for 5-7 minutes on per side. Transfer the chicken to a plate.
Pour the remaining olive oil into the skillet. Add garlic and cook over medium heat for 1 minute. Add the white wine and grape tomatoes. Cook and stir for 5-10 minutes, until grape tomatoes are soft, and the wine begins to reduce.
Add the cooked orzo, spinach, pine nuts, kalamata olives, parsley, basil, oregano, and black pepper. Stir together until combined.
Transfer serving plates. Place the chicken on top and sprinkle on the crumbled feta. Enjoy!
