Fresh Tomato Salad

Serves 6 | 
A healthy choice for summer lunches and dinners.

Ingredients:

2 tablespoons crushed garlic
1 cucumber, sliced
2 tablespoons white wine vinegar
1 green bell pepper, chopped
5 tomatoes on the vine, diced
Salt, to taste
Ground black pepper, to taste
1/2 cup basil, chopped
1 onion, chopped
1/2 cup parsley, chopped

Directions:

  1. In a salad bowl, combine garlic, cucumber, white wine vinegar, tomatoes, green bell pepper, basil, onion and parsley. Toss together.
  2. Season with salt and pepper, toss again and then refrigerate.
Course: Salad
