Ingredients:
Fresh strawberries, sliced
1 packet Instant vanilla pudding
1 1/2 cups flour
3 1/2 teaspoons baking powder
1 tablespoon sugar, sifted
3/4 teaspoon salt
1 egg
1 teaspoon vanilla
1 1/4 cups milk
3 tablespoons butter, melted
Butter, for cooked pancakes
Whipped cream, for garnish
Directions:
In a bowl, gently stir together sliced strawberries and some of the instant vanilla pudding powder. Note: Use pudding powder according to taste. Set strawberries aside.
In a large bowl, stir together flour, baking powder, sugar, and salt. Add egg, vanilla, milk, and melted butter; stir together until smooth.
Drop 1/4 cup pancake batter onto a lightly oiled griddle that is set over medium high heat; cook pancakes until browned on both sides.
To assemble, butter each pancake, and as you are assembling the stack place some of the sliced strawberries between the layers. Serve with a dollop of whipped cream on top.
