Pancakes with Strawberries

Enjoy the flavors of fresh strawberries and rich pancakes.

Ingredients:

Fresh strawberries, sliced
1 packet Instant vanilla pudding
1 1/2 cups flour
3 1/2 teaspoons baking powder
1 tablespoon sugar, sifted
3/4 teaspoon salt
1 egg
1 teaspoon vanilla
1 1/4 cups milk
3 tablespoons butter, melted
Butter, for cooked pancakes
Whipped cream, for garnish

Directions:

  1. In a bowl, gently stir together sliced strawberries and some of the instant vanilla pudding powder. Note: Use pudding powder according to taste. Set strawberries aside.
  2. In a large bowl, stir together flour, baking powder, sugar, and salt. Add egg, vanilla, milk, and melted butter; stir together until smooth.
  3. Drop 1/4 cup pancake batter onto a lightly oiled griddle that is set over medium high heat; cook pancakes until browned on both sides.
  4. To assemble, butter each pancake, and as you are assembling the stack place some of the sliced strawberries between the layers. Serve with a dollop of whipped cream on top.
