No-Bake Pumpkin Cheesecake Balls

Ingredients:
8 oz cream cheese
1 cup powdered sugar
1/2 cup pumpkin puree
1 teaspoon pumpkin pie spice
1 teaspoon pure vanilla extract
1 cup graham cracker crumbs
Directions:
In a large bowl, beat the cream cheese until smooth. Add powdered sugar, pumpkin puree, pumpkin pie spice, and pure vanilla extract. Mix until well combined.
Cover and place in the refrigerator to chill for 1 hour.
Line a baking sheet with parchment paper.
Use a small cookie scoop to form 1-inch balls. Roll the ball in graham cracker crumbs to coat.
Arrange the pumpkin cheesecake balls on the baking sheet. Place in the refrigerator to chill for 30 minutes.
