Ravioli Caprese-Style Salad

Easy, fresh and highly flavorful.

Ingredients:

1 package cheese ravioli, 20 oz.
1/2 cup olive oil
2 tablespoons balsamic vinegar
3/4 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon ground black pepper
4 cloves garlic, minced
1 pint cherry tomatoes, halved
8 oz fresh mozzarella pearls
1/4 cup basil, chopped
Prepared balsamic glaze, for topping

Directions:

  1. Fill a large pot with water and bring to a boil. Once bubbling, add the ravioli and cook according to package instructions. Drain water from pot and rinse ravioli under cold water.
  2. Transfer the ravioli to a large mixing bowl. Drizzle with the olive oil, balsamic vinegar over the ravioli and toss to coat. Sprinkle Italian seasoning, salt, and pepper over the ravioli and toss to combine.
  3. Add the minced garlic, tomatoes and mozzarella. Toss to combine.
  4. Transfer the ravioli to serving plates. Garnish with fresh basil. Drizzle the balsamic glaze over top and enjoy!
